Fresh garlic is one of those must-grow-to-know garden delights. Try it once and there’s no going back to jarred or bland produce department impostors. Here are a trio of favorite fresh garden garlic recipes. Enjoy!

Easy Peasy Pesto

Could there be an easier way to combine summer’s fresh garlic and bountiful basil?  Not likely.

Perfect for summer . . . pasta salad with fresh pesto and cherry tomatoes.
  • 2 cup fresh basil leaves, packed but not squashed
  • 2-3 cloves fresh garlic
  • 2 tablespoons of pine nuts or walnuts
  • ½ cup good olive oil
  • ½ cup grated Parmesan cheese

Combine basil leaves, nuts and garlic in a food processor; process until very finely minced. With the processor running, drizzle in the oil and. Process until smooth. Add cheese and pulse to blend.

Serve on the pasta of your choice. Or with crusty bread. As a topping for grilled steaks. Lots of delicious options. Store in refrigerator. Or freeze in ice cube trays, (empty into freezer bags when frozen) for the taste of summer come November, December and beyond.


Mouthwatering Garlic Lime Fish

Simple, bright flavors for weekday fish dinners to please all.

This recipe works well with most any fish fillets that are ½ to 3/4” thick:  salmon, swordfish, mahi mahi and many others. Try your favorite fish with this!

  • ¼ cup olive oil
  • ½ medium onion, diced
  • juice and zest of one lime
  • 1 ½ tablespoons lime juice
  • 1 garlic clove, minced
  • 2 lbs fish fillets

Preheat broiler. Mix the first 5 ingredients in a small bowl. Place fish fillets on a broiler pan with skin side down about 4-6 in. from flame. Broil until fish begins to flake easily with a fork, typically 15-18 minutes depending on thickness. Brush fish frequently with flavoring mixture during the last 5 minutes of cooking.

Serve hot with rice and a big green salad.

Dreamy Creamy Garlic Mashed Potatoes

An all time favorite of garden garlic recipes, across the country.

For that cold winter day when the ultimate comfort food is what you’re craving.

  • 3 lbs russet potatoes
  • 1 1/2 tablespoons of salt
  • 1 3/4 cups/16 fluid ounces of half-and-half
  • 5-6 cloves of garlic, crushed
  • Romano cheese (optional)

Peel and dice potatoes into 1 1/2” cubes.  Place in large saucepan and add salt and enough water well. Boil on medium until potatoes

In medium saucepan, heat garlic and half and half. Stir gently until liquid begins to simmer. Turn off and set aside.

Drain potatoes and mash, gradually adding garlic cream. Stir well to combine and let sit for 5 minutes to thicken. Serve hot. Sprinkle with Romano cheese if you like (we do!)


Naturally, you can use either store bought garlic cloves or homegrown. However, once you’ve tasted the fresh version and explored the options for creamy, pungent, fiery and even sweet garlics, you’ll find it hard to settle for the plain old stuff. You’ve been warned. . .
